Healthy Meal Plans Week 38
I am finally starting to feel like the season is changing, as the nights get a little cooler and I hear of East Coast friends breaking out their fall jackets and booties. That means it’s time to make some soup and this week’s Broccoli Cheddar soup is a great way to get in your veggies while enjoying a soup that tastes indulgent. It also means incorporating some heartier meals like Spaghetti Squash and Meatballs with Fresh Mozzarella. But don’t worry! Not everything is fall inspired. There are still some great grilling recipes to make sure you have time to get outside.
Let’s talk about this week meal plan! It starts out with Breakfast Apple Crisp, Broccoli Cheddar Soup, and Slow Cooker Chorizo Spiced Pulled Pork. Monday brings Spaghetti Squash and Meatballs and Tuesday is a Sheet Pan Asian Stir Fry. Wednesday is Grilled Sirloin Steak with Chimichurri and Thursday is Grilled Cilantro Lime Chicken. To end the week, meals include Blackened Tilapia and Pineapple Chicken Sausages.

Every week I like to share highlights form the Slender Kitchen meal plans. I believe meal planning is critical to any long term and effective healthy living or weight loss goals. For me it was the single thing that finally made permanent weight loss achievable. The quote stood true, when I failed to plan, I failed, and I don’t want that to happen to others.
Additionally, I believe that meal planning is a skill that takes time to master and we can all use some help! When I first started meal planning it took up countless hours pouring over recipes, calculating nutritional info and/or points, creating elaborate calendars, and building shopping lists. It was painful. Anything I can do to ease that pain for someone else is a win-win in my book.
Finally, I hope by sharing meal plan ideas, it will help you find a system that works for you. Whether it’s using our meal plans or interactive meal planner, writing one into your weekly planner, or creating your own meal planning system – I hope this feature inspires you to start planning at least a few meals every week. Healthier Broccoli Cheddar Soup: Broccoli cheddar soup has always been one of my favorite soups but it was something I never ordered since a cup can have over 500 calories. This lightened up version has all the great flavor of the original with less than half the calories.
Sheet Pan Asian Chicken Stir Fry with Vegetables: There is nothing better than a sheet pan meal to keep dishes to a minimum. This one uses chicken, a bag of Asian vegetables, and an easy homemade stir fry sauce for a 20 minute meal you will love.
Baked Blackened Tilapia: No need to worry about bland tilapia with this recipe! The homemade blackening spices pack in the flavor and make this a favorite among meal plan members.
